Deep Brine Batch

Cheese is brined in a brine batch.

For larger quantities of cheese,          
a deep brine batch in combination
with brine racks are recommendable.

Advantage:

It saves space - The cheeses are
stacked in the racks.

It saves labour - Turning of cheeses
in the racks is not necessary.

It is ergonomic - The cheeses are
lifted with a hoist / no muscle power.

Convenience - The cheeses can dry
on the rack, and the whole rack can
be transported to the storage room.

With a pump / cooling system, the
salt can be mixed very easy and the
temperature can be controlled
A special hoist, with a high corrosion
protection and a high quality stainless steel
chain and hook is needed. A drive motor
riding on a I-beam is used to move the racks
back and forth above the brine batch
